ok, maybe that’s a slight exaggeration!
but honestly, the salad that i made for lunch today just tasted so incredibly good; i think i might have purred when i ate it. *wink*
super simple, nourishing and filling …
black bean garden salad
in a bowl i placed the following ingredients:
fresh spinach leaves
chopped red cabbage
cherry tomatoes, halved
shredded carrots
handful of whole cooked black beans
chopped avocado
crumbled feta cheese
i made a balsamic vinaigrette for the dressing and poured over the top.
{1 part balsamic vinegar to 3 parts olive oil; dash of soy sauce, garlic salt, real salt; squirt of dijon mustard and spoonful of honey – then shake!}
really, this absolutely hit the spot. crunchy, savory, sweet, filling and delish.
