“Bowls” – tex mex concoction

my husband likes his food in bowls. =) and i love to serve him what he loves!
hence, the creation of “bowls.” i make many of my dishes to be served up with all the fixings … in bowls. a few years ago he began to suggest that i open a restaurant, called (of course) “Bowls.” he gets all excited talking about it! hee hee.
anyhoo, whenever i served something he liked, he’d say … “this has to be on the menu at Bowls!” we would then promptly forget.
so a few weeks ago, he pulled out a paper and wrote some of the dishes down, then thumb tacked it to the wall. now we are adding to the list as we go. i can’t fathom opening a restaurant, as there are so *MANY* who cook so much better than me. but i love cooking, i love making my man happy (he makes me happy in so MANY ways).
so i figured .. maybe i’ll post about a “bowl” after i make it … here on my blog.
last night i made my hubby’s absolute favorite, which we’ve dubbed, “tex mex concoction” (jaina helped w/the name!!).
:: i cook a couple of cups of short grain brown rice in the rice cooker; boil 2 boneless/skinless chicken breasts (in the green bowl in this pic); saute some chopped onions and bell peppers in olive oil and garlic …
:: pour all cooked ingredients into casserole dish; add in the 2 cans of salsas; one can of rinsed black beans; some grated cheese …
:: mix it all together and top with:
:: jar of sour cream with chili powder, cumin, garlic salt, sea salt, dash of cayenne mixed in (thanks to my precious jessica w for the inspiration for this topping!)
:: bake at 375 for about 30 min …
funky picture, but believe me … yum! simple, real food … simple preparation and a nourishing, delicious meal! (i’ve made many variations to this, changing the meat and/or the veggie additions. you can’t mess it up!)
