simple pasta salad

((thanks for great recipe recommendations and ideas, friends! sorry i don’t have pics for today – hubby has the camera out of town!))

we love this simple, refreshing summer salad – super easy to prepare  and can be enjoyed for a light lunch over the course of a few days.


:: whole grain, multi color rotini pasta

:: chopped: cherry tomatoes, cucumbers, red and green bell pepper (and whatever other veggies you like!)

:: dressing ( i used to use bottled italian but this homemade is tastier, cheaper and better for us) – 1 part balsamic vinegar to 3 parts extra virgin olive oil + a squirt of dijon mustard + a few tsp of agave + garlic + sea salt + tsp of shoyu

::  mix this all together, and refrigerate.
