food prep for the week

i am feeling good tonight, because of a food few preps that i did over the weekend to prepare for the coming week.

it is a good reminder to me that meal planning and some forethought about food, really works for me. i usually work from a meal plan for the week (for dinners) and shop accordingly but i took it a step further this weekend, and prepared a few staples that we can have for lunch. (lunch can be a struggle, figuring out something nourishing and readily available to eat during our schooling days, while not going with something processed/packaged/boxed.)

in the fridge right now, i have a big batch of chicken rice soup (that we ate for dinner); a pot of beans/sausage/rice; a pot of pinto beans; a quinoa salad.Β  any of these will taste yummy and be quick and easy to eat during this coming week. {glad to provide recipes if anyone wants!}

      mere, yes, it’s inspired from the fabulous mediterranean salad! i used what i had on hand: cranberries, cilantro, sunflower seeds, feta; added in the juice of 2 lemons, olive oil, soy sauce and real salt. πŸ˜‰

    Go, you πŸ™‚ I tend to struggle w/ that some– what to put on when there’s so much going on… planning ahead is key-critical. I wind up finding more use for what I have, and less need for other things when I have a minute to think about it…
