easy green enchilada bake

i’ve been making this lately, because it’s super easy, tastes good, and we usually have the ingredients on hand. 🙂

green enchilada bake

1 large can of green enchilada sauce

several corn tortillas

chopped, cooked chicken (i’ve also used cooked ground beef and it’s great!)

fresh spinach leaves

shredded cheese

crumbled feta cheese

cooked brown rice

can of black beans (or whatever beans you have on hand)

can of diced green chiles

real sea salt and onion powder to season

 

i pour some of the enchilada sauce to cover the bottom of a pyrex, then lay halved corn tortillas to cover the bottom. i top this with the rice, some beans, some chicken and spinach leaves. lay another layer of halved corn tortillas and add another layer of rice, chicken, beans plus the green chiles, feta and some shredded cheese. top with final layer of tortillas, pour enchilada sauce over the top until the pan is pretty “soaked” and top with lots of cheese! cover and bake at 350 for about 30 minutes.
