best little grilled sandwich

i made hubby and i each one of these for lunch and they hit the *spot*! the flavor combination was really awesome.

open-faced grilled sandwich

sprouted whole grain sourdough bread (or whatever you have)

dijon mustard

fresh spinach leaves

pepperjack cheese

deli turkey meat (for hubby’s)

real sea salt, onion powder

extra virgin olive oil


in pan, saute a big handful of spinach leaves in olive oil; season generously with real sea salt and onion powder. once wilted, remove to a plate.

in same pan, pour some more olive oil and place 2 slices of bread in pan. lay sliced cheese on top, squirt on some dijon, pile some cooked spinach, and if you want the meat, add some sliced deli turkey.

cook til bread is brown on the bottom and cheese is melted.
