easy cheap chicken

i am always looking for new ways to cook chicken … tonight, i found one!

i had a package of 4 frugal, organic chicken legs.

i poured a few tbsp of olive oil in the bottom of a deep pyrex (with glass lid cover) dish.

i laid the chicken pieces in the dish, and *covered* them in a LOT of real salt, onion powder, and dried thyme (i’ve learned to really “overdo” it on seasonings … tastes so much better! ).

i then poured more olive oil around the chicken pieces (drizzling some on top) and added a few spoonfuls of lemon juice and a generous dash of apple cider vinegar.

i placed chopped carrot pieces around the edges in the oil mixture.

after covering the dish, i baked it at 350 for about an hour (checking the meat temp with a meat thermometer starting at about 45 min).

serve over cooked, short grain brown rice … with some of the “juice” poured over. YUM!
