baked acorn squash

this is one of our favorites! such a delicious, sweet, tender way to enjoy these winter squash. super easy!!

baked acorn squash

cut the squash in half, and scrape out the seeds and stringy flesh.

place a generous dollop of butter (or coconut oil or butter substitute) in the center of each half. then pour on a spoonful (or so!) of preferred sweetener – we used sucanat (i’ve also used honey, maple syrup, or regular brown sugar).

place halves face up in baking dish that has enough water to cover the bottom of the dish.

cover with foil, bake at 400 for about 45 minutes.


ready to go in the oven!
