day one complete!

we did it … day one of our whole30 challenge.  and actually, it wasn’t as difficult as it might have been. i had a late afternoon dip when i had a major craving for a hot dutch brothers coffee! but otherwise, we did good.

josiah was totally content with the olives, frozen berries, cucumbers and a smoothie (sum total of the days’ snacks). madison prefers meat so we are working toward her eating more greens … yesterday, just eliminating all sugar was a huge success!!

for breakfast, i sauteed organic chicken sausages with spinach; also blended a berry/spinach/coconut milk smoothie.

i had been most dreading not getting to have dairy, especially my cream in my delightful cup of morning coffee! but, i was totally thrilled to find that the coconut milk (canned, full fat, the real stuff) tasted really good in my coffee. (this morning i added some cinnamon and it was even better).

for lunch, i made up a batch of soup:

:: saute onion and garlic in olive oil til slightly soft

:: add chopped carrots and zucchini, stir and saute

:: add generous amounts of cumin and real salt; add about a tsp of chili powder and coriander

:: pour in chicken broth that i’d made the day before,

:: finally, add a generous amount of chopped, cooked turkey (i bought the cooked breast from costco – so good).

i intended to add some kale in the final minutes of cooking but forgot, darn. oh well. i thought the soup was pretty delish!

(also baked some butternut squash fries to go with the soup).

for dinner, i had put a roast in the crockpot for the day, with a TON of chopped carrots. (best pot roast recipe ever: organic roast, top with a LOT of thyme, real salt and onion powder, surround with chopped onions and carrots and add about a cup of raw apple cider vinegar to crockpot. cook on low all day). i served the roast over baked sweet potatoes, and had cucumbers, apples, tomatoes and limes on the side.

not bad!

i pulled out the “big surprise” after dinner: gum! i know, not totally legit for this diet but a very sweet little treat for the end of our first day.

a highlight of the day was the glorious walk i took with hubby and baby caleb, bundled in the bjorn (caleb was bundled, that is. lol). the sun was shining bright despite the freezing cold temps, which i LOVE. it was totally invigorating.
